We are starting from a frankly completely unimaginable hypothetical that there's 0 new "datacentre demand".

In that scenario producing consumer chips is still profitable, much less profitable but still much better than giving up and going home.

You will also unlock latent demand by the mere fact that consumer prices are reasonable again. Those who may have postponed a new MacBook or gaming PC will likely buy as soon as lower prices return.
